Basil Lemon Pasta

I got this idea from one of those single serving Trader Joe’s pasta salads in the refrigerator section. It was soooo good, and I was inspired to make my own version. It’s not exactly like the one at Trader Joe’s, but it’s still pretty darn good. It can be eaten hot or cold, as a side for grilled chicken etc. or all on it’s own.

Ingredients:

1 16oz package orzo pasta

Juice and zest of 1 lemon

1 12oz package of frozen peas, thawed

2 cups chopped spinach

8-10 chopped basil leaves

2 tsp minced garlic

1 6oz container feta cheese

1/4 cup olive oil

Salt & pepper to taste

Directions:

In a large saucepan bring 1-2 quarts well salted water to a boil. Add pasta and cook according to package instructions. While pasta boils, chop the basil and spinach, and juice and zest the lemon. Drain pasta and return to pan with the heat on low, add olive oil and toss to coat. Add basil, spinach, peas and garlic stir gently until peas are warmed and spinach has wilted. Remove from heat and add lemon juice and zest, feta, salt and pepper. Toss gently. Serves 6-10 depending on serving size.
