These cookies were conceived one day when a desire for a cookie above the average chocolate chip mixed with a good rummage through the dry goods pantry. There was once a time in my life when I would bake almost every day. Because of that there was always a pretty good stock of chips, dried fruit, flavored extracts and nuts in the house. I no longer have time to bake so often, so I am not as well stocked these days. I still love to bake though and these cookies are my go to for get-togethers and such. Although now I usually have to make a quick trip to the store first. But it’s always worth it.
Ingredients:
3 cups all-purpose flour
1 1/2 cups granulated sugar
1 cup (2 sticks) butter
1 egg
1 1/2 cups old-fashioned oats
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp vanilla extract
1 Tbsp almond extract
1 cup dark chocolate chips
1 cup white chocolate chips
3/4 cup dried cranberries
1/2 cup chopped raw almonds (optional)
Pre-heat oven to 350 degrees. Cream softened butter and sugar with mixer until fluffy. Add egg and beat well. Add vanilla and almond extracts, baking powder and soda, and salt, mix thoroughly. Add flour slowly until completely mixed. Next gently mix in, one at a time- oats, cranberries, chocolate chips, and almonds (if using). Roll batter into one inch size balls and place on cookie sheet in 4 rows of 3. Bake for 9-11 minutes. Should make about 3 dozen cookies depending on cookie size. In my opinion these are best served cold, so try popping them in the fridge after they cool off sufficiently and enjoy.
